Chewy Anzac Biscuits

Ingredients 

125g butter 

- 2 tablespoons golden syrup 

- 2 tablespoons water

- 1/2 cup brown sugar

- 1/2 cup coconut sugar

- 1/2 teaspoon baking soda

- 1/2 cup plain flour 

- 1/2 cup self raising flour

- 1 cup shredded coconut 

- 1 cup rolled oats (we added 2 to make them denser)

 

Method

1. Preheat oven to 160° 

2. Line baking tray with baking paper

3. Melt butter, golden syrup, sugar and water 

4. Add baking soda 

5. Thoroughly mix all dry ingredients 

6. Add wet ingredients and mix

7. Place spoonfuls on the tray (flatten if you like)

8. Bake for 10-12 minutes

 

Makes 15-20 

 

Hint: Allow to fully cool before eating
