Vegan Apple, Banana & Walnut Loaf

Ingredients 

Wet

2 medium-sized bananas (ripe)

- 1 large apple

- 1/3 coconut sugar

- 1/3 brown sugar

- 1/3 coconut or olive oil

- 2 tsp vanilla extract 

Dry

- 2 cups buckwheat flour (can also use regular plain flour)

- 1 tsp b-carb soda

- 1 tsp cinnamon (or to taste) 

- 1 cup chopped walnuts

 

Method

1. Preheat oven to 180° 

2. Mix wet ingredients in one bowl

3. Mix dry ingredients in another bowl

4. Mix wet & dry ingredients together (don't over mix)

5. Bake for 45-50 minutes

 

Hint: Can easily customise your favourite stir-ins. Such as dates, sunflower seeds, other nuts, oats, dried figs etc.
